Adapted from an old recipe from my middle school home economics class. Felt like pancakes one morning earlier this week. We didn’t have fresh milk on hand so I used condensed milk instead. You’ll need:
- 1 1/2 cups flour
- 3 teaspoons baking powder
- 2 tablespoons sugar
- 3/4 teaspoon salt
- 1 can of condensed milk (about 1 1/2 cups)
- 1 egg
- 1 tablespoon of vanilla extract
- 3 tablespoons of oil
Combine the dry ingredients and mix. Add milk, egg, vanilla, and oil. Mix well, removing large lumps, but don’t over mix. Let the batter sit for 5 minutes.
In a skillet or griddle, set temperature to medium. Depending on portion size, this should make 6 medium pancakes. Serves 2 – 4 people.
